Mexican Sprinkle Cookies (Galletas Grageas)

These festive sugar cookies are a mainstay in any panaderia, or pastry shop, in Mexico and beyond. They’re coated in colorful sprinkles to make them crunchy on the outside, and they have a soft, buttery interior.

- Preheat oven to 350℉. Line 2 sheet pans with parchment paper.
- Mix flour, baking powder, baking soda and salt in a medium bowl; set aside.
- In a separate bowl, cream butter and sugar until pale and fluffy. Add egg and vanilla and continue beating until incorporated. Add flour mixture into the butter mixture in two batches, scraping down bowl after each addition.
- Portion dough out using an ice cream scoop. Coat one side of each dough ball with the sprinkles and place on prepared baking sheets 2 inches apart, sprinkle side up. Press each ball into a 1/4-inch thick cookie. Bake for 10 to 12 minutes, then remove from oven and let cool completely on baking sheets.

Can this cookie dough be frozen?
Hi Christina, These cookies can be made ahead of time and frozen until you ready to bake them. Simply prepare the dough as normal and shape into into a flat disc. Tightly wrap with plastic wrap and freeze. It should stay well in the freezer for up to 3 months. When ready bake, thaw the dough in the refrigerator. Remove it from the refrigerator about 1 hour before baking. Happy baking!
How do you store these to make them last?
Hi Cynthia, You can store the Mexican Sprinkle Cookies in an airtight container for about week. For long term storage we’d recommend wrapping them well and then freezing. Happy baking!
I made a half batch to see how we liked them. I should have made a full batch! This is going into my permanent cookie rotation. I didn’t have the little sphere rainbow sprinkles like in the photos (which are much crunchier than the cylindrical type of sprinkles) but I had white ones, so I used them. it was the right choice because of the extra crunchy to contrast with a pillowy cloud like interior.
