Use the famous Swans Down 1-2-3-4 Pound Cake (our most requested cake!) as a base for creating these iconic 3-D animal cakes. They’re a delightful way to dress up the buffet table for a festive springtime or Easter meal.

  1. Preheat oven to 325℉. Grease and flour a lamb or rabbit mold (or both) and place on a sheet pan.
  2. Make Cake(s): Pour half of the 1-2-3-4 Pound Cake batter into the bottom half of a mold. (Reserve remaining cake batter to make a second mold cake or to bake an extra pound cake using a 9×5-inch pan.) The bottom half of the mold should be solid and the top half will have a vent hole. Place the top half of the mold over the bottom half. Bake for 1 hour or until tester inserted through vent hole comes out clean. Remove from oven and leave in mold to cool for 5 minutes. Carefully remove mold and turn out cake onto a wire rack. Cool completely before standing cake up. Use a serrated knife to trim the bottom of the cake if it is not completely flat.
  3. Place a dab of frosting on a serving platter to anchor the cake in an upright position. Frost cake with a base layer of frosting; set aside a cup of frosting for decorations.
  4. Decorate Cake(s): Tint frosting with food coloring and pipe decorations onto the cake as desired. Use jellybeans, shredded coconut, raisins or ribbon for the bunny’s collar.
