Mexican Sprinkle Cookies (Galletas Grageas)

These festive sugar cookies are a mainstay in any panaderia, or pastry shop, in Mexico and beyond. They’re coated in colorful sprinkles to make them crunchy on the outside, and they have a soft, buttery interior.

    • Hi Christina, These cookies can be made ahead of time and frozen until you ready to bake them. Simply prepare the dough as normal and shape into into a flat disc. Tightly wrap with plastic wrap and freeze. It should stay well in the freezer for up to 3 months. When ready bake, thaw the dough in the refrigerator. Remove it from the refrigerator about 1 hour before baking. Happy baking!

  • I made a half batch to see how we liked them. I should have made a full batch! This is going into my permanent cookie rotation. I didn’t have the little sphere rainbow sprinkles like in the photos (which are much crunchier than the cylindrical type of sprinkles) but I had white ones, so I used them. it was the right choice because of the extra crunchy to contrast with a pillowy cloud like interior.
