If you like delicate baked goods, these are the best.
I made the very blueberry morning muffins, but I changed a few things.
Orange and blueberry go really well together.
I had a blood orange in my frig so I zested it and used most of the zest in the batter and saved a bit for the tops.
I mixed the juice from half of blood orange and remaining zest with icing sugar.
Poked some holes in the tops of muffins and drizzled the icing over.
They came out sooo good, I can’t wait to make them again.
Love this recipe , I made the first batch of muffins with fresh strawberries and the second with bananas absolutely delicious !

Doubled the recipe and made mini loafs. I always rub the grated lemon zest into the sugar to infuse a more lemony flavor. Using a good butter, like Kerrygold, also makes a real difference. Absolutely delish!
